The Louis Roederer Foundation, partner of Villa Albertine, supports pastry chef Corentin Poirier-Martinet’s first gastronomy residency

The Louis Roederer Foundation joined in 2023 the cultural sphere of the United States for the first time by becoming a partner of Villa Albertine, France’s fourth Villa abroad. Villa Albertine organises residencies for artists and professionals from a variety of disciplines, and propose grants for thinkers and creators to support the dissemination of contemporary French and francophone art on the American territory.

In 2024, the Louis Roederer Foundation is supporting Corentin Poirier-Martinet, the first pastry chef chosen for a residency at Villa Albertine of San Francisco.

“At Villa Albertine, I am meeting individuals involved in local agriculture, to understand the terroirs of the Western United States. I hope to discover new foods and taste combinations that will help me create original desserts rooted in ecology and respect for nature.” Corentin Poirier-Martinet explains.

Based in San Francisco, the epicentre of the farm-to-table concept, which promotes healthy, sustainable and environmentally-friendly food, Corentin Poirier-Martinet is currently meeting farmers and chefs celebrated for their eco-responsible commitment and techniques to discuss the ingredients they use and their cooking and preserving methods, whether traditional or innovative. He is seeking to engage in a dialogue about the future of farming practices and their impact on the culinary scene. The young chef wants to immerse himself in different Californian terroirs and explore the great farming areas of Santa Clara’s Valley, Napa Valley and Sonoma to create desserts that highlight their own identity.

This is the first Villa Albertine residence to be supported by the Louis Roederer Foundation. Corentin Poirier-Martinet was an obvious choice: he is a demanding and inventive pastry chef who values the local area and draws inspiration from other expertise. The Louis Roederer Foundation is a cross-disciplinary organisation, and supporting fine food – increasingly synonymous with art and creativity – is an opportunity to support tremendous talents in new artistic fields.
